I love cheesecake as much as the next person, but it's such a pain to make a full-sized cheesecake. This recipe for cheesecakes baked in cupcake papers in a muffin tin is fast, efficient (single serving = perfect for parties/potlucks), and most importantly, delicious. Once you try this recipe you'll never want to hassle with making a full-size cheesecake again.

CHEESECAKE CUPCAKES
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/4 cup butter or margarine, melted
three 8-oz. packages cream cheese, softened
one 14-oz. can sweetened condensed milk
three large eggs
two teaspoons vanilla extract
one 21-oz can pie filling (cherry, peach, blueberry etc.) or other toppings
Pre-heat oven to 300 degrees. Combine graham cracker crumbs, sugar and butter in a bowl; press equal portions into bottom of two paper cup-lined muffin tins. In large bowl, beat cream cheese until fluffy; gradually beat in sweetened condensed milk, eggs and vanilla and mix until smooth. Spoon equal amounts of batter into each paper cup (about 3 tablespoons per cup). Bake 25 minutes or until set - check cakes using a clean knife slipped into one of the cakes when nearing the end of baking time). Remove baked cakes from oven, cool and refrigerate. Top with pie filling, chocolate or caramel syrup, fresh fruit, candy bits or any topping you like just before serving. Makes 24 cheesecakes.
